Thanks to the flu being rampant in our school this winter, the last week of the fall semester was canceled. This effectively ended any and all opportunities to give my kids’ teachers a Christmas gift, which works out kind of great for me since I just learned the hard way that old vanilla beans don’t make very good vanilla extract no matter how long you let it steep.
Enter chocolate covered strawberries. My word, who DOESN’T like them?! And who doesn’t like to GET them? No one. That’s who.
If you are looking for the perfect gift, let me share a little bit of “gift math” with you:
Strawberries + chocolate + low time commitment + low cost + so easy kids can help + doesn’t look homemade + everyone will enjoy it = chocolate covered strawberries
It’s not hard (or expensive) to make chocolate covered strawberries gluten and dairy free, but I want to show you exactly what we use so you can easily make them too!

Making Chocolate Covered Strawberries
The process is quite simple. You don’t need a ton of kitchen skills to pull this off. All you need is a small pot, a cookie sheet, wax paper, and some freezer space.
First, wash and dry the strawberries. Then place a strip of wax paper on the cookie sheet. Now, melt the the chocolate chips and coconut oil in the small pot over med/low heat. Be sure to stir it frequently to keep the chocolate from burning. Remove the chocolate from the heat source when it’s completely melted, and dip the strawberries in the it up to the leaves (or less if you want some of the strawberry flesh to show).
Set each strawberry on the cookie sheet and sprinkle with Valentine’s sprinkles immediately, otherwise the chocolate will dry and the sprinkles won’t stick to it.
After you dip all of the strawberries and put them on the cookie sheet, place the cookie sheet in the freezer for 15-20 minutes for the chocolate to dry and firm up. Remove cookie sheet and package chocolate covered strawberries in gift boxes. Store in the refrigerator until you’re ready to deliver them or up to 24 hours.
After 24 hours the chocolate may start to “sweat” and pull away from the strawberries. They are still good to eat, but are not as pretty to look at.
The simplicity of this recipe easily allows for the kids to help out, and they love it! Plus, it’s inexpensive enough that you don’t have to wait for a special occasion to make them.

- 2 lbs fresh strawberries
- 1 bag Enjoy Life mini chocolate chips
- 1 Tbsp coconut oil
- 1 bottle Valentine's sprinkles

- 1. Wash and dry the strawberries.
- 2. Line a cookie sheet with wax paper.
- 3. Melt the chocolate chips and coconut oil in a small pot over med/low heat.
- 4. Stir frequently to keep the chocolate from burning on the bottom of the pot.
- 5. When the chocolate is melted, remove the pot from heat.
- 6. Dip the strawberries one by one in the chocolate, covering almost to the leaves.
- 7. Place each chocolate covered strawberry on the wax paper.
- 8. Sprinkle with Valentine's sprinkles, if using.
- 9. Repeat steps 1-3 until all the strawberries are covered with chocolate and sprinkles.
- *Tip* If chocolate starts to thicken in the pot before you're finished, just reheat it on low for a couple of minutes and you should be back in business.
- 10. Place the cookie sheet in the freezer for 20 minutes to let the chocolate dry and harden.
- 11. Remove the cookie sheet and package in gift boxes. Store in the refrigerator until ready to deliver.
- Store in the refrigerator for up to 24 hours. After this the chocolate may begin to sweat and pull away from the berries. These are definitely best when eaten within 24 hours.
